Forte Presents our Best Quick Winter Dessert Recipe!

Forte’s Executive Chef Anthony Sullivan had the pleasure sampling this dessert prepared by our good friend and chef Tony Carter.

Anthony has recreated this recipe for a perfect winter treat; it is quick and best of all it is a delicious dessert. Its great served over fresh quality berries or fresh fruit & only takes a few minutes to prepare & serve.

Our Grand Marnier Sabayon with Winter Fruits recipe is also great if you are thinking of hosting a Christmas in July lunch or dinner.

 

Grand Marnier Sabayon w Winter Fruits Recipe (Serves 4)

 

Sabayon

  • 2 egg yolks
  • 1 whole egg
  • 55gm castor sugar
  • 30 ml sweet white wine
  • 15 ml Grand Marnier

 

Fruit & garnish

Your choice of; Strawberries, blueberries, raspberries, blackberries or mulberries Also works well with stone fruits when in season. A pinch of nutmeg.

 

Method

  1. Prepare your berries &/or fruit wash, dry & cut.
  2. Place berries into a bowl or glass
  3. Place wine, Grand Marnier & sugar into stainless or heat proof bowl, about 20cm in diameter, whisk gently until dissolved.
  4. Add the eggs & yolks, then place over a saucepan of boiling water (bain marie) whisk continuously for several minutes or until the mixture becomes thick & frothy. **
  5. Then pour the warm sabayon over the berries.
  6. Finish with a pinch of fresh ground nutmeg & serve immediately.

 

** Variation

  1. Place bowl in fridge until chilled
  2. Whisk 130ml thickened cream until the form firm peaks, fold through chilled mix
  3. Then mix pour over berries
  4. Finish with a pinch of fresh ground nutmeg & serve immediately.
